Vineyard located at 115 km from the Atlantic coast and 100 m altitude. Old vines of 94 years of age with N-SE orientation.
Mountainous and continental region with hot, dry summers. Shale soil
100% hand harvested on the 3rd of September.
The grapes are partially destemmed and crushed directly for an open top, 3 days of cold maceration: 12 day alcoholic fermentation without temperature control, soft steps twice a day; 1 from "cuvasion"; malolactic fermentation in new French oak barrels.
Aged 48 months in French oak.
