Made mainly with a duo of grape varieties: Antão Vaz & Rabo de Ovelha. Antão Vaz, is the main grape variety with circa 70% complemented by Rabo de Ovelha 20%. For greater freshness, the harvest was carried out in two phases. Initially, we harvested Rabo de Ovelha, leaving Antão Vaz and Roupeiro (10%) for a later harvest. We wanted to maintain a profile of great freshness, enhanced by the Rabo de Ovelha, combined with a better maturation of the fruit that Antão Vaz, harvested a week later, allows us.
The different varieties ferment separately in stainless steel tanks at a controlled temperature of 14-16ºC to preserve the fruit and maintain its youth. After the fermentation, the base wines were transferred from the gross lees, blended and matured in stainless steel, in contact with unstirred fine lees, until bottling after 5 months of maturation.

Tasting Notes: Visually, it presents a bright citrine yellow with greenish hints. The aroma has a good intensity of stone fruit notes (peach and apricot) and citrus notes (grapefruit and lemon). Herbal notes and a slight touch of dried fruit add to the aromatic complexity. It is a set of clean aromas with good intensity and exuberance.
In the mouth, it has an excellent balance with a lively acidity and a medium and linear mouth volume. It is rich, textured, long and has a pleasant finish.
Pairing: Given its freshness and volume in the mouth, it is a good partner for grilled fish or solid salads based on pasta and/or white meat, such as Caesar salad. A more regional option is dogfish soup! It will be a good partner for barbecues of various types of meat. Pasta and pizza also fit well with this profile.
