Integrated production, no herbicide use, vineyard planted in 2012 at 310 meters. During the harvest, all the grapes are hand-picked and then transported to the cellar in small boxes, where they were stored on a cold chamber at 3°C for 24h. Then the grapes were selected and gently pressed. The grape must was decanted at a cold temperature (10°C) and then fermented and aged in used French oak barrels from Burgundy with battonage and sur lies.
